Chicory
(Cichorium intybus)


  • taprooted perennial with milky juice growing to 1.5 metres in height; low growing rosette leaves resemble dandelion but are hairy; blue flowers (occasionally pink or white) usually close by midday

  • leaves are used as a salad and roots when dried are used as a coffee substitute
